Pina Colada Poke Cake
Pina Colada Poke Cake. Poke holes in the hot cake with the round end of a wooden spoon and slowly pour the pudding mixture over the cake, trying to fill the holes. Once the cake is removed from the oven, keep the cake in it's pan and poke holes all over the top of the cake with a wooden spoon handle.
In a large mixing bowl mix together your poundcake, eggs, milk, and butter and pour into your greased baking pan. Immediately pour pineapple mixture over the top of the cake. Pour the pineapple in the bottom of the pan.
Drain and reserve juice from pineapple; cover and refrigerate pineapple tidbits.
Whip the cream with a whisk or electric hand mixer until soft peaks form.
In a large bowl using a hand mixer or whisk, beat together cake mix, water, pineapple juice, vegetable oil, and eggs. Transfer to the prepared baking dish. Check for doneness by inserting a toothpick into the middle of the cake.
