Sour Cream Coffee Cake Muffins. Beat butter, sugar, and eggs together in a large bowl with an electric mixer on medium speed until creamy. Grease a muffin pan with cooking spray.
Whisk together the flour, baking powder, salt, and baking soda. Stir dry ingredients together in mixing bowl. Mix then sift flour, sugar, cinnamon, baking powder, and salt together in a large bowl.
To make the crumb topping, combine sugars, cinnamon and salt in a medium bowl.
Sprinkle evenly with half of the topping.
Add in the salt, baking powder, and baking soda. In a large mixing bowl, combine the dry ingredients and set aside. CAKE BATTER: Soften butter in bowl of stand mixer.
